Crock Pot Santa Fe Chicken

Super easy. Crock pot does all the cooking. Delicious.

Crock Pot Santa Fe Chicken
Adapted from Skinny Taste.

Ingredients:

  • 24 oz (1 1/2) lbs chicken breast
  • 14.4 oz can diced tomatoes with mild green chilies
  • 15 oz can black beans
  • 8 oz frozen corn
  • 1/4 cup chopped fresh cilantro
  • 14.4 oz can fat free chicken broth
  • 3 scallions, chopped
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cumin
  • 1 tsp cayenne pepper (to taste)
  •  salt to taste


Directions:

  1. Combine chicken broth, beans, corn, tomatoes, cilantro, scallions, garlic powder, onion powder, cumin, cayenne pepper and salt in the crock pot.
  2. Season chicken breast with salt and pepper and lay on top.
  3. Cover and cook 10 hours on low, or 6 hours on high.
  4. 30 mins before serving, remove chicken and shred. Return chicken to crock pot and stir. Adjust seasonings as needed, and finish cooking. 
  5. Serve with toppings of choice - shredded cheese, chopped scallions, sour cream, etc. 
This was really good! The whole family enjoyed it! I served it over rice for myself and the kids, and served it over a baked potato for my husband - he's not much of a rice guy :)
